Add a glug of olive oil and a good shake of garlic salt to the kale and massage the kale with your clean hands for a good minute.  Add in the juice and zest of one lemon, and a good handful of raisins and pistachios.  Sprinkle with parmesan.   Add in more of whatever you need...   It's so good!

Fresh Friday: Lettuce Wraps

Jake and Hannah made these at the beach house this summer and I loved them.  I've made them for dinner a few times since then. Tyrone told Jaxon, "Just eat them with your eyes closed, they taste great".  You must make the dipping sauce, it's the best part. Asian Lettuce Wraps Recipe by Our Best Bites 2 tsp canola oil 4 cloves garlic, minced 1 tablespoon minced fresh ginger 1 lb ground chicken/turkey 3 ounces mushrooms, finely chopped (about 8 small mushrooms) 1/2 tsp kosher salt 4 C bagged coleslaw mix or thinly shredded cabbage 1 8oz can sliced water chestnuts, drained, rinsed, and finely minced 1/2 C thinly sliced green onions (never use these) 4 Tbs soy sauce 1 tsp sesame oil 1 lemon, zested and juiced (about 3-4 Tbs juice) 1/2-1 tsp sriracha or other hot sauce  1/3 C roughly chopped cilantro 1-2 heads iceberg lettuce Dipping/Drizzling Sauce 4 Tbs soy sauce 4 Tbs rice vinegar 3 Tbs water 2 tsp honey 1-2 tsp finely minced fresh ginger Heat a very large skillet...

Fresh Friday: Coleslaw

No mayonaise in this coleslaw. It's a Pauline Brown special and I love it. We've been eating it on fish tacos (baked tilapia, toasted Trader Joes tortillas with melted cheese, coleslaw and cilantro vinaigrette or mango salsa - off the hook good!) It would be great for a summer BBQ too. 1 head of cabbage, shredded 1 green pepper, diced 1 small onion, diced 2 carrots, shredded (or one store bought bag of coleslaw mix :-) Toss above with 1 cup of white sugar. Bring to a boil and pour over the cabbage/sugar mixture: 1 cup vegetable oil 3/4 cup vinegar 1 tsp celery seed 1 tsp dry mustard 2 tsp salt Refrigerate overnight. (Or at least a few hours.) Serve with a slotted spoon!

Fresh Friday: Orchard Harvest Salad

Another great Panera recipe. They make food that I love. This is a great fall salad. Add some sliced grilled chicken on top for the perfect meal. 2 heads of romaine lettuce, chopped 1 pear, still firm, cubed 1 apple, cut in small pieces 1/2 cup dried cherries 1/2 cup gorgonzola cheese, crumbled (tastes like blue cheese, if you like that flavour) generous dousing of Briannas Blush Wine Vinaigrette Toss together and enjoy!

Fresh Friday: Berry Citrus Salad

Before the summer is over this salad is worth a try. We ate it first in New Hampshire with Carrie's family and Tyrone's been talking about it ever since. This recipe comes from The Recipe Club. Salad 1 large bag spring mix baby lettuces, or two heads of romaine lettuce chopped 1 can mandarin oranges, well drained 1 pint black berries or raspberries, rinsed & patted dry 1 pint strawberries, quartered 3/4 cup feta or Gorgonzola cheese, crumbled 1/2 cup candied pecans (sauté gently with butter and brown sugar) Fresh Citrus V inaigrette Juice and zest of 2 oranges and 2 limes 1/4 cup sugar 2/3 cup oil Whisk vigorously in a bowl. This recipe makes a ton of dressing. Use sparingly. If you add too much dressing and it sits for any length of time it will turn into a soupy mess. Add dressing and pecans just before serving.

Fresh Friday: Bean Salad

Fresh Friday: Strawberry Salad

It's almost strawberry season here and this is another delicious salad - from Courtney this time. Tyrone LOVES this salad. It's just a toss together salad. one head of romaine lettuce chopped, or a few handfuls of the Costco spring mix, or a small bag of fresh spinach, chopped one cup of sliced fresh strawberries shredded Asiago cheese if you desire Mix with Briannas Blush Wine Vinaigrette . (The one with the strawberry) Top with sugared almonds just before serving. Sugared Almonds - Take a heavy pan and toss in 1/2 cup of slivered almonds, 1/4 cup of white sugar and a tbsp of butter. Put the heat on medium. Watch carefully - in about a minute the sugar will start to melt. Then you need to stir them constantly with a wooden spoon. In about 3 or 4 minutes the sugar will melt to a golden color and will coat the toasted almonds. Remove from the heat and spread on a plate until they cool. Break apart and sprinkle on salad.

It's really easy to cook and takes on the flavour of whatever yo...

Fresh Friday: Road Runner Salad

1 large bunch broccoli, cut into small flowerets, not cooked 10-12 strips bacon, fried crisp and crumbled (I buy a precooked pack and then just toss in the microwave - much faster and less mess) 1/2 cup raisins 1/4 cup chopped red onion 1 cup mayonnaise 1/2 cup vinegar 2 tbsp sugar Combine broccoli, bacon, raisins and onion in a large bowl. Blend mayonnaise, sugar and vinegar. Pour over broccoli mixture and stir to coat well. Cover and marinate at least one hour. This is another great Emily salad that I just can't get enough of!
