Overheard

Jaxon to Taye and Andrew: " I know my parents can't be Santa, they would never have bought a Wii!"

Fresh Friday: Cranberry Fruit Dip

Just a thought for your leftover cranberry sauce. Tryone found this recipe a few years ago and really likes it - me too of course. I'm a cranberry junkie. 4 oz cream cheese, softened 1 cup whole cranberry sauce 1 cup soft cool whip Mix cream cheese and cranberries, fold in cool whip. Refrigerate for an hour before serving.

Swim Meet

Taye had a big swim meet on Saturday. He swam: 200 Free 50 Breast 100 Fly 50 Free 100 Back (We skipped the Sunday portion) This year around swim is no joke! Four laps of fly for a 9 year old?! It was his best race though, I think he placed in the top five. Go Taye! No pictures, I was too nervous for Taye to do the 200 and 100 fly to think about pictures, plus I had Scotia with me up in the hot, damp bleacher area for four hours! (It should be illegal for year round swimmers to have fathers in school)

Fresh Friday: Apricot Pistachio Oat Bars

These are the perfect sweet and salty treat. I'd make them all the time but I think I'm the only person in my house who loves them. I've had a thing for dried apricots for as long as I can remember... 1/2 cup all purpose flour 1/2 cup rolled oats 1/3 cup packed brown sugar 1/4 cup butter, melted 3/4 cup sweetened condensed milk 1 pinch saffron threads or 1/2 tsp ground cardamon (I skip this since I don't have either) 1 cup flaked coconut 1 cup shelled dry roasted pistachio nuts 1 cup raisins 1 cup dried apricots, snipped into bite size pieces 1. Heat oven to 325F. Line an 8x8x2 inch baking pan with foil, extending foil over pan edges. Lightly coat foil with non stick cooking spray; set aside. 2. In a medium bowl combine flour, oats and brown sugar. Stir in butter until mixture clings together. Press 3/4 cup of the oat mixture into the bottom of the pan. 3. For filling, in a small saucepan over low heat bring the condensed milk and, if desired saffron or cardamom to ...

Go Wolfpack!

Our neighbours gave us tickets to an NC State men's basketball game. The kids and I ventured out (while Tyrone studied) and had a really wonderful time. They were quite enthralled with the game, the dancers and the overpriced popcorn. Now, we like State, but we will always bleed UNC and BYU blue.

To add insult to injury

Last week I got a speeding ticket and a few days later a ticket for running a red light and hitting another car (no damage fortunately). It's my first (and second ticket) since living in NC. Besides being mentally fragile at this point I'm also living off of a very finite amount of money that has to last exactly 23 more months. There is no budget line for traffic tickets and over the moon auto insurance. If we all manage to survive the next 2 years and make it to graduation mentally and physically intact it will be nothing short of a miracle.

Mental Health Meeting

Tyrone's school had a mental health meeting for all the students and significant others last night. Too late! It's November already. Everyone in that room was already hanging by a thread. Suggestions: Please drink at least one glass of water in between each caffeinated beverage you consume Take the stairs all the time, cause there is no time to exercise In the morning tell yourself, "I can stand up, I don't need help going to the toilet. It's a great life!" If you don't have time to attend an actual appointment with the free counselors you can just call and vent over the phone They would not have accepted you into the program if they didn't think you could do the work; but have a back up plan anyway! And that my friends, is all you need to know about surviving Anesthesia School.
