Fresh Friday: Oreo Delight

There's nothing fresh about this recipe but it is Tyrone's favorite dessert so it has to hit the blog sometime. And since we are in Utah at the Brown's house this week it is a recipe that comes from them. Warning - this is a twice-a-year dessert. No only are the calories out of this world but the cost for all the ingredients is quite astounding. 1 1/4 lbs O reos 2 cups powdered sugar 2 8oz cream cheese 16 0z cool whip 2 sticks butter 2 small boxes instant chocolate jello Crush cookies (save a few for top), and mix with melted butter. Use for crust on the bottom of a 9x13 pan. Refrigerate for 15 mins . Mix cream cheese, powdered sugar and 1/2 of cool whip and spread on crust for second layer. Prepare jello according to directions and spread on for third layer. Final layer is rest of the cool whip. Sprinkle few crushed O reos on top. Keep cool and serve to hungry men.

Fresh Friday: Spicy Peanut Chicken

I consider fresh ginger, cilantro and lime to be my holy trinity of cooking flavors (fresh basil comes a close fourth) - so if I see a recipe with one of the four I try it. This one I love and cook all the time. 1/4 cup chicken broth 1 tablespoon cornstarch 1 tablespoon sugar 2 tablespoons soy sauce 1 tablespoon white vinegar 1/4 teaspoon ground red pepper (cayenne) 1 tablespoon vegetable oil 1 pound boneless skinless chicken breast, cut into 3/4-inch pieces 1 garlic clove, finely chopped 1 teaspoon grated fresh gingerroot (I use way more ginger than this - maybe three big tbsp. Love this stuff!) 1 medium red bell pepper, cut into 3/4-inch pieces 1/3 cup dry-roasted peanuts 2 medium green onions, sliced (2 tablespoons) (I never use these, although I'm sure they'd be pretty) big pot of sticky rice 1. Mix broth, cornstarch, sugar, soy sauce, vinegar and red pepper; set aside. 2. Heat wok or 12-inch skillet over high heat. Add oil; rotate wok to coat side. Add chicken, garlic and...

Smiling Scotia

I can never catch Scotia smiling on camera - but this new camera is faster - and harder to use. Here's some smiling pics, but too fuzzy. I think I needed to use the flash so that the shutter speed would have been faster. I'll figure it out...

Scotia's dress

Dad, this is the dress Scotia wore last Sunday. When she wears the new fall dress I'll post that too. Welcome to Scotia's clothes blog!

We Thank Thee, O God, for a Prophet...

To guide us in these latter days.... This week as the sky was falling down all around I was so grateful for a prophet of God who has been saying things like this for the past decade: “The time has come to get our houses in order. “So many of our people are living on the very edge of their incomes. In fact, some are living on borrowings. … “I am troubled by the huge consumer installment debt which hangs over the people of the nation, including our own people. … “I urge you … to look to the condition of your finances. I urge you to be modest in your expenditures; discipline yourselves in your purchases to avoid debt to the extent possible. Pay off debt as quickly as you can, and free yourselves from bondage” "If you have paid your debts, if you have a reserve, even though it be small, then should storms howl about your head, you will have shelter for your wives and children and peace in your hearts. That’s all I have to say about it, but I wish to say it with all the emphasis of whi...

Temple Trip

Today we had a quarterly primary activity road trip to the temple. It was a great activity but very hard to organize. The temple will not send anyone out to talk to groups, the stake building next to the temple will not schedule rooms for groups not in that stake, so we just had to wing it. A little intro to the temple out on the stake center lawn, then a walk around the temple and picnic lunch at a little park just behind the church. This was the first time my boys had seen our local temple and I could tell they really liked it. On the way out Taye asked me "I wonder which temple I'll get married in?" I told him that there are 130 temples, in Japan and Nova Scotia and all over the world and any one of them would be just fine!

New camera

Let's all bid adieu to our old camera. Many years ago when we first lived in Chapel Hill Tyrone helped the Jensens get their new/old condo ready to move in. As a thank you Trevor gave us a new digital camera. It has seen us through two babies, a new house, and countless trips and outings but now at 5 1/2 years old it is an antique in the digital world. So out with the old and in with the new! Do these brown eyes melt your heart?
