Fresh Friday: Meal Planning Edition

This is a quick post, by request, on my meal plans and easy dinner ideas.

Every two weeks I grab a scrap piece of paper and write down fourteen meals to cook - a few easy, a few veggie, a few manly, a salad or two, something new and a personal favorite for someone. Then I write a list based on the items I need to refill my pantry and fridge and whatever else is needed to complete the fourteen meals.

(see, I need five cans of chicken broth, three jars of spaghetti, four cans of corn and a lot of pretzels)

On the pantry wall I have a white erase board - on one side I write the fourteen meals to cook, on the other side I keep track of things as they are getting low and need to be replenished. White flour, pancake syrup, dishwasher soap etc. Taye usually adds "rifle airsoft gun" or something of that sort. As if I'll actually buy it on a grocery shopping trip.

After my groceries are purchased and put away then I'm home free. Each morning I look at my list and pick one to make that evening. I try to cook the meals with lots of fresh veggies first so they don't go bad. If it's a crazy day I'll pick something really easy. If it's first thing in the morning and I've got time I'll pick one of the more complicated dinners. I always cross the meal off once I've cooked it.

Most of the recipes I cook are from my mom, my friends, my little collection of cookbooks and web sites. If it has ginger or cilantro I'll try it in a heartbeat.

I'm interviewing my family to find out their favorite meals, but here are few that I think are the easiest. If it's a soccer/cubs/swim day - these will work great!

  1. You're awesome! I love this post. I am similar, but need to be better about the menu part! I'm so picky about what I like to make and eat each night..it's silly.

  3. LOVE the Honey Curry Chicken, so tasty! How are you holding up this semester? I think I have finally become numb, because it feels easier for some reason? I love the new hospital rotation the boys are on though. It seems like they are home early everyday.

Divorced

Maybe you figured something was up and maybe not.  Tyrone and I have been separated for four years (2 years during covid just living in our house with all the kids, and two years Tyrone living in a condo we purchased nearby) now and just finalized the divorce this spring.  Compared to what I usually hear it was a pretty easy process and I think we are doing a fantastic job taking care of our kids together!  I'm super proud of us!  I feel so light and free and happy and confident.  And I've been on a few dates... all which were super fun and enjoyable and relaxing.  So happy with my life at this stage.  And a few cute date outfits for you: Fancy French restaurant in Durham.  First time having a bottle of wine uncorked and poured at the table. We are both big supporters of public education.  Nearby Mexican restaurant with lots of conversation about our Canadian roots. Playing cards at a brewery in Cary.  Started off so fun and silly. ...

Appaloosa Fest 2025

Mark and Blythe and I drove north and Courtney and Christine and Nicole drove south to meet us at the Labor Day Weekend  Appaloosa Music Festival for the third year in a row.  Georgia's dad's (Ben) band was playing !  They sounded amazing!  Mark's favorite of the whole weekend. Scythian played and we danced.  Then we got home to our haunted house super late and stayed up even later playing a game.  Sunday morning we hiked Knob's ridge.  And then back for a second day of music.  And Blythe taking care of the animals.  Monday morning Courtney and Nicole were feeling a little sick so they headed home.  Mark, Blythe and I hiked to the Seven Pools and then drove home too.  Great weekend! Blythe and I both had shirts on that we took from Courtney's good will  pile last time we were at her house.

I did not lose my faith I lost my belief

A few years ago just before Christmas Scotia asked Tyrone if Santa was real and he told her the truth. She'd been working up to it - wondering why I had a closet full of presents under a blanket, why the wrapping paper all matched, how Santa could get in the house without a proper fireplace, how could Santa make it around the world in one night, how could he get in houses without a key, why some kids got so much or so little or nothing... finally the evidence was just overwhelming and she asked Tyrone. Post Santa Christmases are just as good as Santa Christmases.  She loves helping me buy presents and she is chief wrapper now.
