Fresh Friday: Black Bean Soup

Trevor Jensen makes the best black bean soup I've ever tasted. But it was full of bacon!

This healthier version is light and fresh and really tasty with some yummy salsa on top. And my kids will eat just about anything if it's served with tortilla chips. (I love how all the carrots and celery just disappeared in the blending too - and don't forget to toss in a handful of cilantro)

Black Bean Soup

1 T olive oil
4 large cloves garlic, roughly chopped
3/4 C diced carrots (about 2 med carrots)
3/4 C diced celery (about 2 ribs)
1 C diced onion (about 1 sm-med onion)
2 cans black beans, rinsed and drained
1 3.5oz can green chilies
2 cans low-sodium beef broth  (one can is plenty - otherwise soup is too thin)
1 t kosher salt
1/8 tsp black pepper
1/2 t chili powder
1/4 t cumin (I used more)
1/2 t dry oregano leaves
1 bay leaf
1 lime, juiced

Optional Toppings: sour cream, tortilla chips, grated cheese, chopped cilantro, salsa, guacamole etc.

Place a large stock pot on the stove-top and set to medium-high heat. When pan is warm, add olive oil. Add carrots, celery, onion, and garlic and saute 4-5 minutes. Add in the black beans, chilies, and beef broth. Stir to combine and then add the salt, pepper, chili powder, cumin, oregano, and bay leaf.

Simmer uncovered for about 20-25 minutes or until carrots are tender.

Remove from heat. Remove bay leaf from soup.

Place soup in a blender. (You could use an immersion blender in place of this step) Place lid on blender, but remove the stopper in the lid to let heat escape. Place a paper towel over the hole to avoid splatters.

Puree soup until completely smooth. Optionally you could pulse until a semi-chunky soup is achieved. Squeeze in the juice from one lime and pulse to combine. (I threw in a handful of fresh cilantro too. It was perfect)

Ladle into bowls and top with desired toppings. Serve with extra lime wedges. Makes about 8 C soup.

  3. These are the notes I have from Trevor - Cook bacon (half a package), drain off as much fat as you don't want in the soup - or leave it all in! Add chopped onion, a few cans of black beans and simmer, near the end toss in some fresh cilantro, diced tomatoes (or 1/2 cup of pico) and add fresh lime juice and salt to taste.

Divorced

Maybe you figured something was up and maybe not.  Tyrone and I have been separated for four years (2 years during covid just living in our house with all the kids, and two years Tyrone living in a condo we purchased nearby) now and just finalized the divorce this spring.  Compared to what I usually hear it was a pretty easy process and I think we are doing a fantastic job taking care of our kids together!  I'm super proud of us!  I feel so light and free and happy and confident.  And I've been on a few dates... all which were super fun and enjoyable and relaxing.  So happy with my life at this stage.  And a few cute date outfits for you: Fancy French restaurant in Durham.  First time having a bottle of wine uncorked and poured at the table. We are both big supporters of public education.  Nearby Mexican restaurant with lots of conversation about our Canadian roots. Playing cards at a brewery in Cary.  Started off so fun and silly. ...

Appaloosa Fest 2025

Mark and Blythe and I drove north and Courtney and Christine and Nicole drove south to meet us at the Labor Day Weekend  Appaloosa Music Festival for the third year in a row.  Georgia's dad's (Ben) band was playing !  They sounded amazing!  Mark's favorite of the whole weekend. Scythian played and we danced.  Then we got home to our haunted house super late and stayed up even later playing a game.  Sunday morning we hiked Knob's ridge.  And then back for a second day of music.  And Blythe taking care of the animals.  Monday morning Courtney and Nicole were feeling a little sick so they headed home.  Mark, Blythe and I hiked to the Seven Pools and then drove home too.  Great weekend! Blythe and I both had shirts on that we took from Courtney's good will  pile last time we were at her house.

I did not lose my faith I lost my belief

A few years ago just before Christmas Scotia asked Tyrone if Santa was real and he told her the truth. She'd been working up to it - wondering why I had a closet full of presents under a blanket, why the wrapping paper all matched, how Santa could get in the house without a proper fireplace, how could Santa make it around the world in one night, how could he get in houses without a key, why some kids got so much or so little or nothing... finally the evidence was just overwhelming and she asked Tyrone. Post Santa Christmases are just as good as Santa Christmases.  She loves helping me buy presents and she is chief wrapper now.
