Fresh Friday: Housemade Pretzels

This is a fun snacks for kids to make on a rainy day or a long empty afternoon...

Soft and Yummy Pretzels
4 to 4 ½ cups flour
1 package of dry yeast
1 ½ cups milk
¼ cup sugar
2 tbsp cooking oil
1 tsp salt
2 tbsp salt
3 quarts of boiling water
1 slightly beaten egg white
1 tbsp water
cinnamon sugar

In a large mixing bowl, stir together 1 ½ cups of the flour and the yeast; set aside. In a medium saucepan heat and stir milk, sugar, oil, and the 1 tsp salt until warm. Add milk mixture to dry mixture. Beat with an electric mixture on low for 30 seconds, scraping the sides of the bowl. Beat on high speed for 3 minutes. Stir in as much of the remaining flour as you can.

Turn out the dough onto a lightly floured surface. Knead in enough of the remaining flour to make moderately stiff dough that is smooth and elastic. Shape the dough into a ball. Place the dough in a lightly greased bowl. Cover and let rise until it is double in size (about an hour).

Punch dough down and turn out onto a lightly floured surface. Cover and let rest for 10 minutes.

Meanwhile, grease 2 baking sheets.

Roll dough into a 12X10 inch rectangle. Cut into 20 strips. Gently pull each strip into a rope about 16 inches long. Shape into pretzels.
Carefully place pretzels on the baking sheets, and bake at 475 for 4 minutes. Remove from oven and turn down to 350.

Dissolve the 2 tbsp salt into the boiling water. Lower pretzels 3 or 4 at a time into the water. Boil for 2 minutes, turning once. Using a slotted spoon, remove from water and place back on baking sheets.

In a small bowl, stir together egg white and 1 tbsp water. Brush pretzels with some of the egg white and then sprinkle with cinnamon sugar. Bake at 350 for 20 to 25 minutes until golden brown. Cool on wire racks. Makes 20.

  2. This looks like a good YW activity. Maybe if we make the dough ahead of time, and let it rise at home? I'll have to ponder that...

Divorced

Maybe you figured something was up and maybe not.  Tyrone and I have been separated for four years (2 years during covid just living in our house with all the kids, and two years Tyrone living in a condo we purchased nearby) now and just finalized the divorce this spring.  Compared to what I usually hear it was a pretty easy process and I think we are doing a fantastic job taking care of our kids together!  I'm super proud of us!  I feel so light and free and happy and confident.  And I've been on a few dates... all which were super fun and enjoyable and relaxing.  So happy with my life at this stage.  And a few cute date outfits for you: Fancy French restaurant in Durham.  First time having a bottle of wine uncorked and poured at the table. We are both big supporters of public education.  Nearby Mexican restaurant with lots of conversation about our Canadian roots. Playing cards at a brewery in Cary.  Started off so fun and silly. ...

Appaloosa Fest 2025

Mark and Blythe and I drove north and Courtney and Christine and Nicole drove south to meet us at the Labor Day Weekend  Appaloosa Music Festival for the third year in a row.  Georgia's dad's (Ben) band was playing !  They sounded amazing!  Mark's favorite of the whole weekend. Scythian played and we danced.  Then we got home to our haunted house super late and stayed up even later playing a game.  Sunday morning we hiked Knob's ridge.  And then back for a second day of music.  And Blythe taking care of the animals.  Monday morning Courtney and Nicole were feeling a little sick so they headed home.  Mark, Blythe and I hiked to the Seven Pools and then drove home too.  Great weekend! Blythe and I both had shirts on that we took from Courtney's good will  pile last time we were at her house.

I did not lose my faith I lost my belief

A few years ago just before Christmas Scotia asked Tyrone if Santa was real and he told her the truth. She'd been working up to it - wondering why I had a closet full of presents under a blanket, why the wrapping paper all matched, how Santa could get in the house without a proper fireplace, how could Santa make it around the world in one night, how could he get in houses without a key, why some kids got so much or so little or nothing... finally the evidence was just overwhelming and she asked Tyrone. Post Santa Christmases are just as good as Santa Christmases.  She loves helping me buy presents and she is chief wrapper now.
